These charcoal side-baskets are really simple, but do exactly what they’re supposed to — provide indirect heat in a Weber grill for chicken, ribs, and other proteins that benefit from lower cooking temperatures. The only problem I’ve encountered is loading them from the Weber chimney, which you really need to start up the coals for indirect cooking. Briquets have a way of bouncing out of the racks.
