The texture of these “chips” is much finer than any other wood chips I’ve gotten for smoking The texture of these “chips” is much finer than any other wood chips I’ve gotten for smoking. This actually works out well for smoking fish (like Salmon) since the smoke starts a little quicker and burns more thoroughly. It won’t last as long, but fish typically doesn’t need to smoke for huge lengths of time. I estimate the average chip size to be around 3/8th inch square.
